Tomato Veggie Casserole - Blogmas Day 11


This Tomato Veggie Casserole recipe has been in my food rotation for nearly two years now. Here is the original recipe but over the two years, I have perfected my own version of it. Please note that my version is vegan. You can tweak it to your own personal preference.

Tomato Veggie Casserole
Serves 6

1 medium potato, peeled and cut into 1/2-inch pieces
1 medium yam, peeled and cut into 1/2-inch pieces
1 red bell pepper, seeded and cut into 1/2-inch pieces
2 carrots, peeled and cut into 1/2-inch pieces
5 tablespoons melted coconut oil
1 red onion, thinly sliced into rings or strips
2 small or 1 large zucchini, cut crosswise into 1/4-inch-thick pieces
Salt and pepper
herbs de provence
dried basil
2 large ripe tomatoes, cut crosswise into 1/4-inch thick slices
1 plastic package of Mozzarella Daiya
Panko (at least half a cup) or Italian style breadcrumbs
Fresh basil sprigs, for garnish

I highly suggest cutting and peel all your veggies into cubes before starting. It will make the process smoother.

  1. Preheat the oven to 400 degrees F. 
  2. Mix the potato, yam, bell pepper, carrots in a 13 by 9 baking dish. Drizzle 2 tablespoons of coconut oil. Sprinkle salt and pepper. Mix together with hands and spread the vegetables evenly over the bottom of the pan.
  3. Sprinkle a thin layer of Daiya and panko. (This is not in the original recipe, but I love the melted "cheez" and the crispyness of the panko when it is cooked.)
  4. Place onion slices over the veggies. Put zucchini over the onion. Drizzle 2 tablespoons of coconut oil. Do another thin layer of Daiya and panko. 
  5. Sprinkle salt, pepper, dried basil and herbs de provence. Arrange the tomato over zucchini.
  6. Sprinkle a thicker layer of Daiya and panko over the veggies. (I usually use the rest of the Daiya package.) Drizzle with one last tablespoon of coconut oil.
  7. Bake uncovered until the veggies are tender, and the topping is golden brown, about 50 min. Garnish with fresh basil. Enjoy!!!
